‘Pershotvir’ Biologist is an extra brut sparkling white biodynamic wine made using the Pet-Nat or Ancestral method at a winery in the Kyiv region. Grape varieties: Chardonnay, Veltliner, Müller-Thurgau, Riesling, and Traminer. What makes this wine unique is its spontaneous fermentation with wild yeasts and the absence of sulphites in its production. It has a pale straw colour.
The ‘ancestral’ method is an ancient way of making sparkling wines, when the wine is bottled at the end of fermentation. The bottles are closed with ‘beer’ caps, and the fermentation process continues, producing natural carbon dioxide. Thanks to this method, the wine does not require the addition of sulphur, remaining stable and natural. The wine is aged for at least 4 months on the lees in the bottle, after which it undergoes disgorging (removal from the lees).
The aroma of the wine is expressive and multifaceted, with notes of meadow herbs, gooseberries and light hints of fermented fruit. The taste is light and refreshing, with pleasant natural acidity and a delicate, playful aftertaste. Recommended serving temperature: 10-12°C. It perfectly complements white stewed meat, seafood, fresh salads, and also tastes great on its own as an aperitif.
